Which are the product lines of Manconi and in what do they differ?

On the base of which criteria should I choose a slicer with a built-in in or a separate sharpener?The choice depends on the different customs, meaning that it derives from the traditional habits of slicing, which differ from country to country.

One can say that the separate sharpener allows a faster cleaning, since the blade is completely sheltered. For what regards the built-in sharpener, since it’s always set on the slicer, it doesn’t run the risk of getting lost or of being replaced.

How can I choose between gear or belt transmission?

Slicers with gear transmission represent top scale machines and benefit of maximum level performances for what regards precision, cut, fluency, reliability, and presentability.

Slicers with belt transmission have a more common line, but still maintain maximum performances.

In what do vertical models differ from gravity models?

The major difference resides in the inclination of the blade. Gravity models allow the product to fall towards the blade, facilitating the cut. On vertical models the product is moved by hand from the operator since the blade is perpendicular to the surface.


Why do all slicer models with blade 300-350-370 mm have two types of plates?

The plate TC is used for slicing meat: employed mostly in butcher’s shops/ departments.

BV plate is optimum for cutting delicatessen products and cheese: employed mostly in delicatessen departments.

On Manconi’s slicers with blade 350 mm (Kolossal and Master), the plates are interchangeable.

I like Manconi’s slicers very much, but I’m not able to choose the model that best fits my needs. Can you help me?

To slice meat choose a vertical model with TC plate.

To cut cheeses, “prosciutto” and all other delicatessen products, choose indiscriminately a vertical or gravity model. The choice depends on traditional market’s habits.

The choice of the blade’s diameter is based on the maximum dimensions of the product to cut. The technical cards report the maximum diameter and the greatest size of the rectangle to slice.

I would like to buy a Manconi slicer, but the depth of my counter is not sufficient to support the 4 feet. What can I do?

Why is the mechanism that locks the product important?

On gravity slicers the mechanism improves the steadiness of the product to slice, allowing a greater accuracy in the cut and reducing losses.

I have some problems in slicing doughy cheeses, what should I do?

Choose a slicer with teflon coated blade, slice thickness plate and blade guard, or with profiled blade.

What does the mark CE on the ID tag mean?

CE means that Manconi’s slicers satisfy the obligatory requirements of European Directives 98/37/CEE, 89/336/CEE, 2006/95/CEE. Furthermore, it also means that a series of organizational actions have been put forth in order to preserve the requirements on the serial production.

I own an old slicer, pre-September 1996, without the CE mark; what should I do?

If you are a private citizen and employ the slicer only for personal use, you can continue to use it.

If you own or are responsible for a shop, you should consider the risks you may face (D.L. 626/94). You may also decide not to replace the slicer and assume the responsibility.

What should I do with the slicer I want to replace?

The slicer can be handed over to the dealer of the new slicer, bought to replace the old one.

What distinguishes a good slicer from an ordinary one?

  • Noise of the transmission. A good slicer is also quiet.
  • Smoothness and absence of blockage of the carriage and last slice device. These should never block, even in the presence of unbalanced loads.
  • Low loading height; the lower the height is, the less the strain of the operator.
  • Gratifiable design. The slicer completes the furniture of a shop. For this reason the brightness and the lack of aesthetic imperfections must be visible.
  • High-quality blade, with the lowest waving effect and peculiarities for a perfect cut.
  • On all slicers, the product must be supported even over the edge of the blade.
  • Rigidity and planarity of the slice thickness plate, both for a more accurate cut, and for a greater level of safety since it covers the blade.
  • Smooth flowing, safe blockage, easy handling, ergonomics.
  • Ergonomic shapes and positions of the handles, knobs and levers. Slicers should be easily grasped and handled.
  • Wide spaces. All parts should be cleaned easily and rapidly, so there mustn’t be inaccessible or difficult to reach recesses.
  • Easiness of disassembly (without tools) of the parts to be cleaned, (plates, last slice device, blade cover, sharpener, product deflector).
  • Possibility to clean with jet of water.
  • Safe and resistant materials. The manufacturer should give evidence to the chain of supply, in accordance with the European Regulation n. 2023/2006 del 22.12.06.
